Our local customers agree – life in our pretty Highland village of Beauly has stepped up a notch since COTS introduced our early evening pizza menu, which is now cemented as a firm favourite in this area which is home to many discerning “foodies”.
From April-October we open late on Wednesday, Thursday, Friday and Saturday evenings, between 4pm and 8pm, to offer our sensational stonebaked pizzas. November-March it’s Friday and Saturday evenings only.
NEW from April 2024…..we will be adding pasta and salads to our early evening menu!
Firstly, we blend, knead, prove and hand stretch our own lean pizza dough, made in the Neapolitan style, which means it contains nothing but flour, water, salt and yeast with polenta dusting the peel. (Gluten free option is available)
Then on goes the classic Italian tomato sauce, basil, fresh mozzarella and toppings of your choice, before it’s popped on to the stone in a flaming oven for just the right amount of time to stonebake it to perfection.
Our irresistible pizzas can be enjoyed in our cafe, or picked up at the deli counter to take away and savour at home. Either way, you’re in for a treat.
Like everything we prepare and serve at COTS we use locally sourced ingredients wherever possible, which definitely adds pizzaz to our pizzas.
We also have devised some delicious variations which add Scottish flair to the usual pizza topping combinations. For example, The Highlander is a popular pizza on our menu that starts as a classic Margherita but is enlivened and enhanced with Stornoway Black Pudding, Brie and Cranberry. Or try The Angler, topped with Scottish hot smoked salmon, mascarpone, lemon and crisp apple.
You don’t have to stick to our prescribed menu options. Build your own gourmet pizza if you wish, selecting from our range of available toppings. Go totally vegetarian or vegan (we have vegan cheese) or indulge in a full-on meat feast pizza that comes loaded with chicken, ham, spicy salami, pepperoni and sweet red peppers on a margherita base.
If you’ve still got room for more after devouring one of our delicious pizzas there’s dessert on the menu too – Belgian sugar waffles drizzled with chocolate sauce, topped with Scottish berries and banana, and served with a scoop of Rizza’s Double Top Luxury vanilla ice-cream.
The best thing about our home-made pizzas is not just that they taste so good, but that they are a healthy meal to make you happy. There’s no added sugars, saturated fats, preservatives or colourings – just wholesome local cheese and nutritious fresh toppings.
Stone-baking in a flame oven means our pizzas never have soggy bottoms – just a perfect puffy crust.
So, there’s no reason not to enjoy a COTS pizza whenever you fancy without any of the guilt usually associated with “fast food” options.
